In this class, students will create their very own mini Harry Potter figure and learn valuable fondant modeling techniques in how to bring life and expression to this cute Harry Potter figure.Aspects covered at this portion of the workshop include; body structure, Hogwarts uniform detail, facial features and Harry’s signature hair style. And you can use the skills you learn at this workshop on your future fondant creations. This workshop is open to ALL SKILL LEVELS from Beginner to Professional. Sashiko Windbiel's Biography....
Originally from Japan, she relocated to New York City in
2008 to attend a culinary school specializing in vegetarian cooking and
healthful food preparation techniques. Upon graduating, Sachiko began working
at a wedding and specialty cake company, where she quickly realized that pastry
was her destiny. In 2010 she launched mimicafe Union, where she creates
custom-made 3D edible fondant toppers for cakes, cupcakes, cookies, and cake
pops. Sachiko says she loves the challenge of figuring out how to translate a
photo or idea into a fondant figure. Sachiko has won many cake competitions,
including first place at the 2014 National Capital Area Cake Show in the
Wedding Cake division; first prize at the 2013 ‘That Takes the Cake’ show for
her cupcakes and toppers; and first place in the Best Anniversary Theme Cake category
at the 2013 National Capital Area Cake Show. Her work has appeared in numerous
magazines, including Cake Masters and American Cake Decoration. Sachiko’s motto
is “Live a happy life and cherish your sweet memories.”. This will be another opportunity to learn from a world renowned artist.

I started my catering business 29 years ago, and enjoyed every minute of it. But my biggest passion was the pastry side of the business. Back then, I saw how many of my friends and people that I knew struggled in being able to purchase many of the professional products and bakeware that I was privileged to use. I wanted to find a way to not only sell professional products, but also teach the customers on how to use them and show them new trends within the sugar art world.
in 1995, my family and I relocated to Cleveland Ohio. We spent several years there while my frustration on finding good products and ingredients continued until my husband was relocated again. This time, we moved to central Florida in 2000. It was here where I learned that there was such a thing as the "Cottage Law", which gave me an opportunity to jump start a pastry business from home while taking care of my kids.
Inspired by the new trends in this industry, the need to share my latin flavors and my passion to teach people on how to do their own masterpieces, The Sweet Chalet was established and opened it's doors in the spring of 2016.
Since then, we have been blessed to have had such a wonderful acceptance within our community. We have made a huge splashin the local market and the cake decorating industry. Now, we're making global waves with our online distribution.
