Simi Isomalt GlassWorks Cake with Suspended Ornamental TopperLocation: The Sweet Chalet Shoppe209 Bellagio CirSanford, FLSat May 16, 2020 9am-5pm**Students need to bring:1. A double barrel dummy cake (no real cake for class) covered in a light yellow or orange colored or white fondant, dried, mounted on an 8-inch cake drum. Cake dummy size 6 inches wide by 8 inches tall.2. Also bring two 8x8 inch boxes and bubble wrap to take home both pieces.3. Optional: Turn TableSidney took her techniques from glass blowing and developed the same system in her favorite edible medium, isomalt! We will start with blown sugar exercises and move into her new technique of Air Casting. First, with two-part molds and, later, with 1-part molds while manipulating the isomalt into shapes. We will layer paint our cakes with abstract textured designs and adorn the cake with our air casted pieces. We will then create the internal structure for the suspended ornamental topper and add the finished air casted pieces.All tools provided for use in class. Some isomalt experience helpful. *NOTE: We will build our hanging toppers on our lamp stands. If you wish to purchase a decorative hanging stand, we bought a 38-inch-tall hanging stand from Home Depot. We also found stands on Amazon, Lowes, Wayfair…Pizza lunch, drinks, snacks provided with class. If you have any dietary restrictions, you are welcome to bring your lunch. There is a refrigerator and microwave available.

I started my catering business 29 years ago, and enjoyed every minute of it. But my biggest passion was the pastry side of the business. Back then, I saw how many of my friends and people that I knew struggled in being able to purchase many of the professional products and bakeware that I was privileged to use. I wanted to find a way to not only sell professional products, but also teach the customers on how to use them and show them new trends within the sugar art world.
in 1995, my family and I relocated to Cleveland Ohio. We spent several years there while my frustration on finding good products and ingredients continued until my husband was relocated again. This time, we moved to central Florida in 2000. It was here where I learned that there was such a thing as the "Cottage Law", which gave me an opportunity to jump start a pastry business from home while taking care of my kids.
Inspired by the new trends in this industry, the need to share my latin flavors and my passion to teach people on how to do their own masterpieces, The Sweet Chalet was established and opened it's doors in the spring of 2016.
Since then, we have been blessed to have had such a wonderful acceptance within our community. We have made a huge splashin the local market and the cake decorating industry. Now, we're making global waves with our online distribution.
